Here's a word from our customer:

Hey Ville,

You sold a fine pan (de Buyer)! I first did the seasoning with duck fat and then with cold pressed vegetable oil. The latter, I think, provided maybe a slightly better result. It was a bit hard to get the pan hot and the fat kept blackening at the center of the pan. Then, I had the idea of heating up only the sides of the pan over a small burner. The results were amazing. Now, cooking an egg is easier than it was on teflon. And I'm not going back! I sent all the teflon pans to metal recycling. I still have one teflon wok pan, but once that gets dark, I'm getting a steel one to replace it!

Carbon Steel Fry Pan

The carbon steel fry pan is one of the essentials of any kitchen. If a high quality japanese cooking knife is the king of food preparation tools, the fry pan is the undeniable queen.

Why You Should Choose a Carbon Steel Fry Pan

In terms of frying properties, the carbon steel fry pan is far superior to teflon pans.

The benefits of a carbon steel fry pan are not limited to its frying qualities. It's also the choice of someone who cares about their health. Teflon fry pans are often made with harmful nonstick surface enabling chemicals and materials, which can travel into your body through your food. These problems don't exist with the carbon steel pan - if anything, you might get a hint of iron, which is natural and beneficial to the body.

The carbon steel fry pan reserves and conducts heat extremely well. The ground beef will be browned, instead of cooked, like many other pans can end up doing. In addition to that, the sealing of the surface of the steak or meat can be done efficiently. A good pan is something you want, because every steak wasted on a low quality pan is too much.

The best part about the carbon steel pan is that it can't really be ruined. The pan can be renewed through maintenance over and over.

The professionals around the world swear by the de Buyer fry pans due to their durability and exceptional qualities. By switching to a carbon steel fry pan, you reduce the amount of waste produced by short-lived fry pans.

Carbon Steel vs. Cast Iron?

The frying properties of the carbon steel pan are close to the cast iron pan most everyone is familiar with. The problem with the cast iron fry pan is often its heavy weight. The carbon steel pan is significantly lighter, making it easier to handle. Cast iron can also crack or shatter upon impact, should it fall down.

The porous cast iron can also easily end up absorbing flavors into itself. The carbon steel fry pan is also often a better choice for making foods high in protein, such as eggs or fish.

What Is a Good Carbon Steel Fry Pan Like?

Someone looking for a good carbon steel fry pan should look for a pan that's made of a thick layer of steel. The thicker the sides of the pan are, the more durable the pan. De Buyer fry pans are some of the thickest on the market and they don't bend or twist easily, which can happen with thinner carbon steel fry pans.

Paista store stocks fry pans for the professionals as well as for the demanding cooks at home. We have pans for all occasions, ranging from the small blini pans to the large, two-handled country fry pans. Because the carbon steel pans are addictive (and we are die hard fans ourselves), we also have omelette, crêpe and wok pans.

De Buyer Carbon Steel Fry Pan

De Buyer is a company with over a hundred years of fry pan making expertise. It is one of the most respectable manufacturers in the world when it comes to quality carbon steel fry pans. The de Buyer fry pans have been finely refined throughout the years to be of the outstanding quality they are today. The products beautifully combine practicality with a traditional design. The de Buyer carbon steel fry pans especially enjoy an iconic reputation, making them desirable heritage pieces even after years of use. As the pan gets darker throughout the years, the nonstick surface improves - and as the pan's hue deepens, so will its story.

The carbon steel fry pan costs about as much, if not less than the most common, coated fry pans available at any market, so due to the carbon steel pan's ability to withstand time, it turns out to be more afforable pan in the end. Of course, it's not all about saving some money: cooking on a high quality carbon steel fry pan is also simply pleasurable.

On Different Stoves

The de Buyer carbon steel fry pan is compatible with any kind of a stove. It's an excellent choice for the induction cooker, the gas stove or even for the grill. When using on an induction stove, you might wish to avoid the highest of temperatures. This is how you prevent the pan from twisting and the cooking temperature won't become too high.
